If you don't want to feel unsatisfied, we highly recommend ordering the generously portioned Kouki! This kaiseki course allows you to enjoy authentic snow crab prepared in a variety of dishes.We generously use the first leg meat (the part with the most meat) of the genuine snow crab! All the crabs we use are genuine large snow crabs (Bardai species), which are 10% more expensive and rare than those on the market. Compared to the commonly available Opilio species, they are thicker, more satisfying to eat, and have a stronger, more distinctive crab sweetness.

Using a special broth infused with the delicious flavor of crab, the rice is rinsed with water to remove its stickiness, and then shredded crab meat is sprinkled on top to finish the dish.
